Most of the flavor components in the raw materials are water-soluble and do not dissolve in fats and oils. With the dehydration of the raw materials, these flavor components are further concentrated. Therefore, using vacuum frying technology can well preserve the original flavor of the raw materials.

3. Fryer snack foods can reduce the deterioration of fats and oils: the deterioration of frying oil includes oxidation, polymerization, and thermal decomposition. The fryer mainly uses water or water vapor to contact the oil to produce hydrolysis.
